Nordic Stone Age Bread

This recipe is a combo of nuts, seeds, EVOO & eggs. It's super satisfying and delicious. Make it for open faced sandwiches, to accompany soups and salads or top with avocado & smoked salmon!

Ingredients

1/2 cup flaxseeds

1/2 cup chia seeds

1/2 cup sesame seeds

1/2 cup pumpkin seeds

1/2 cup whole Almonds chopped

1/2 cup pecans

1/2 cup walnuts

1 tsp salt

1 tsp pepper

4 large pastured eggs (I like Vital Farms Organic or Handsome Egg Co)

1/2 cup EVOO


Preparation

Preheat your oven to 320° and line your loaf pan with parchment.

Combine all your dry ingredients in a bowl, then add the 4 eggs and olive oil until well combined. Once it is a dough consistency transfer to your heated oven and bake for 1 hour.

Let cool, then place on a wire rack to cool completely. Once cooled, slice and enjoy!


Store at room temp for 3 days wrapped in tea towel

Store in refrigerator for 10 days
